White quinoa is an extremely healthy grain, rich in fiber, minerals, and amino acids. In fact, it's one of the few grains that earns the title complete protein, because it contains all nine essential amino acids.
It is a delicious and versatile grain, but must be rinsed thoroughly before use. Quinoa has an outer coating which contains saponins, which have a bitter taste. Rinsing your quinoa well before cooking will remove this coating and reveal its smooth, creamy taste.
